ASIAN CAESAR SALAD

ASIAN  CAESAR  SALAD:

INGREDIENTS:

450 g chicken breasts, boneless, skinless
1/4 cup sour cream, fat - free or light
1 large head romaine lettuce,torn into pieces
2  green onions, chopped
2 celery stalks, chopped
1/2  cup frozen peas, thawed
2 tbsp shredded parmesan cheese
4  crispy wonton wrappers,  to serve
1 tsp sesame seeds

For soy marinate, mix together
1/4 cup rice vinegar
2 tbsp light soy sauce
1 tsp sesame oil
2 garlic cloves, minced
1/4 tsp oriental hot sauce

METHOD:
  • Marinate chicken in 3 tbsp of soy mixture for at least 15 minutes. Grill in a preheated oven at 180c until done ; let it cool and then shred. Keep aside.
  • Whisk sour  cream into remaining soy mixture until smooth; set aside. Combine lettuce, green onions, celery, peas and parmesan in a salad bowl. Toss gently.Pour half of dressing over greens and toss. Serve salad, topped with chicken and wonton. Serve with remaining dressing for pouring on chicken, if desired.
BRIGHT IDEA   -Using fresh pea pods instead of frozen peas gives a great taste.      (serves  4 )
