SALAD WITH TUNA

SALAD WITH TUNA:

INGREDIENTS:

3 potatoes,boiled, peeled and cut into blocks
250 gms thin green beans, blanched
1 small onion, halved and sliced into rings
3 tomatoes, seeded and cut into blocks
410 gms each, canned sugar beans and chickpeas each, drained and rinsed
3 tbsp chopped parsley
1 tbsp shredded basil
1 tin tuna in brine, flaked
90 ml olive oil
3 tbsp vinegar
salt and pepper, to taste

METHOD:

  • Mix potato, green beans, onion, tomato, sugar beans, chickpeas, parsley and basil in a mixing bowl.
  • Dish into a salad bowl, or onto a salad plate. Mix olive oil and vinegar and flavour with salt and pepper. Drizzle over salad and serve.
NOTES  - Delivers 4 portions
