RED ONION SOUP

RED ONION SOUP:

INGREDIENTS: 

2 large red onions,halves  and sliced
20 ml butter
200 ml vegetable stock
400 ml  beef stock
150 ml grape juice
15 ml fresh thyme or lemon thyme, stripped from stem

METHOD:

  • Heat butter in a saucepan and fry onion gently for about 5 minutes, until soft.
  • Add rest of the ingredients and simmer for 10 minutes. Season to taste with salt and freshly - ground black pepper and serve.
NOTE  - serve with crusty bread.
