TOMATO SALSA

TOMATO SALSA:

INGREDIENTS:

600g ripe tomatoes, peeled and deseeded
1  jalapeno pepper, halved, stemmed, seeded and minced
2 tbsp minced red onion
2  cloves garlic, minced
2 tsp fresh lime juice
Each, sugar, salt and pepper, to taste
2 tbsp finely minced fresh coriander leaves
Baked tortilla chips, to serve

METHOD:
  • Finely chop tomatoes on a tray, reserving any juice that might collect.
  • Place tomatoes and juice in a bowl. Add jalapeno, onion, garlic, lime juice, sugar, salt and pepper. Toss well and allow to stand for about 30 minutes.
  • Stir in minced coriander and allow to stand for another 10 minutes. Serve with baked tortilla chips.
NOTE-Serves 8
