SEARED TUNA ON RICE BALLS WITH AVOCADO

SEARED TUNA ON RICE BALLS WITH AVOCADO:

INGREDIENTS:

1g crushed black pepper
100g tuna fillet
5ml olive oil
80g Japanese rice, cooked
2g black and white sesame seeds
5g wasabi paste
35g mayonnaise
15g green tobiko
Avocado slices, to serve

METHOD:
  • Spread crushed black pepper on a plate.Coat tuna steaks with it.
  • Heat olive oil in a pan on high heat, place tuna steaks and sear for 30 seconds on each side. Slice tuna steak into square shapes and set aside. 
  • To prepare rice balls, mix cooked Japanese rice with vinegar, sugar and salt. Shape this mixture into small balls and coat with black and white sesame seeds. Set aside for serving.
  • On a decorative serving platter, arrange rice balls, then place avocado slices on the sticky rice balls (as shown in the picture) and firmly place tuna on top of the rice balls. Garnish with wasabi, mayonnaise and green tobiko. Serve with a decorative toothpick and serve.
