LEEK SOUP WITH BASIL

LEEK SOUP WITH  BASIL:  EUROPE    (serves 4)

INGREDIENTS:

400 g waxy potatoes
2 cloves garlic
3 leeks
2 tbs rapeseed oil
1/2 curry powder
1 ltr chicken stock
100 ml cream
Salt and white pepper
1 tbs lemon juice
Nutmeg
Basil leaves,to garnish

METHOD:

  • Peel the potatoes and cut into pieces. Peel and finely chop the garlic. Wash and trim the leeks and cut into pieces.
  • Heat the oil and sweat the garlic and leeks. Dust with curry powder and stir in the stock. Add the potatoes and cream and simmer over a medium heat until the potatoes are soft.
  • Season with salt and white pepper and add the lemon juice and nutmeg to taste. Serve scattered with basil leaves.
TIPS  - In general, leeks can be substituted for onions in most dishes using onions for flavouring, which will result in a much stronger flavour, which might be detrimental to the intent of the original dish.
