CHEESE RAKAKAT

CHEESE RAKAKAT:    MIDDLE EAST   (serves  4)

INGREDIENTS:

200 g akavi cheese
80 g mozzarella cheese
1 egg
5 g dry zatar
30 g white flour
40 ml water
8 spring roll (or filo pastry ) sheets
Oil for deep- frying
40 g lettuce leaves
40 g tomato slices
40 g lemon slices
80 g romaine lettuce

METHOD:

  • Slice the akavi chees. Then steep completely covered in cold water for 3 hours until it gets sweet. Blend it together with the mozzarella cheese, egg and dry zatar.
  • Mix the flour with the water to form a thick liquid to stick the spring roll sheets together when filled with the cheese stuffing.
  • Take the spring roll sheets, cut each into four square pieces, then fill each piece with some of the cheese mixture. Fold the sides of the pastry towards the centre and then roll it like a cigar. Finally stick the ends together with the water and flour mixture.
  • Deep- fry the rakakat rolls until golden. On a serving platter put some lettuce on the side, then the fried rakakat in the middle. Garnish with the lettuce and a slice of lemon and tomato.
TIPS  - An alternative is to fill these typically Lebanese fried cheese wraps with melted feta and mozzarella cheese.
