MUSSEL SALAD

MUSSEL SALAD:

INGREDIENTS:

250 gms mussel meat, halved
60 gms mixed peppers, diced
30 gms diced tomatoes
 40 sliced spring onion
60 ml olive oil
30 ml lemon juice
Salt and pepper, to taste

METHOD:

  • Toss all the ingredients together, except salt and pepper, in a salad bowl.
  • Just before serving, sprinkle salt and pepper and toss again.
NOTES  serves  4
